I do not like doing the dishes. Neither does my husband. So before the kid are old enough to take on this chore, I do my best to stick to one-pan recipes. Of course, the leisurely weekend meal may involve more mess in the kitchen and more dirty pots but on weeknights we take it easy.

Do not be scared away by the word “kale” among the ingredients. The bacon, soy sauce and garlic work magic together and make otherwise not-so-popular-with-kids kale taste simply divine. My picky seven year old declared it “yummy”, asking for seconds and even the cautious 4 year old gave it a try. Oh, I also did a clever thing – prepared the kale in advance on the weekend, so it took me under 20 minutes to put the dinner on the table.

Family friendly kale, potato and bacon dinner

Ingredients
  • • 1 big bunch or 2 small bunches of kale
  • • 5 medium organic potatoes
  • • 2 garlic cloves, peeled and chopped
  • • 2 slices of bacon
  • • 2 tablespoon of soy sauce
  • • ½ teaspoon salt

Instructions
  1. Wash the kale and rip off the leaves. Kids love doing this part and it helps them experience the vegetable in its raw form. Steam or boil the kale until soft, for 4-5 minutes.
  2. If you used the boiling method, make sure to squeeze out as much water as possible after draining the kale.
  3. Chop the kale roughly.
  4. Cut the potatoes. If you use the organic variety, you do not need to peel them, just scrub thoroughly to remove dirt.
  5. Brown the bacon in a large frying pan until crispy. Remove from the pan with a slotted spoon. Drain most of the fat or wipe it with a kitchen towel.
  6. Add the potatoes and brown them on all sides. Add the garlic, fry it with the potatoes for a couple of minutes until slightly brown and aromatic. Season with salt.
  7. Add 1 cup of water, put the lid on, lower the heat and cook for 10 minutes until the potatoes are tender and the water evaporated. If the potatoes are still tough, add a couple of tablespoons of water and cook for 2-3 minutes more.
  8. Add the chopped kale, bacon and soy sauce. Put the lid back on and let everything warm through over a low heat for a few minutes.
  9. Enjoy!
