My family loves chocolate. We favor darker, more flavorful varieties which also happen to be healthier because they are lower in fat and sugar and higher in antioxidants. The kids are so used to dark chocolate that they often prefer to the more “kid-friendly” milk chocolate. There is always a few bars of the good stuff in the kitchen cupboard and it became a stand by dessert for the whole family on the nights when fresh fruit or smoothie just do not seem to cut it.
Since chocolate is such an important part of our lives, we are always on a lookout for new and fun ways to eat it. I was a little skeptical about the soy mousse recipe when I first saw it a couple of years ago. Tofu and chocolate just did not seem an appealing combination to me. But I did not have to worry – it turned out they go perfectly with each other. Besides, this mousse is the lightest and silkiest one I have ever prepared.
If you are worried about the flavor of tofu, rest assured that the vanilla, maple syrup and ginger take really good care of it. I once served this mousse to my friends and none of them even suspected any unorthodox ingredients as they were happily polishing the ramekins.
Above all, this recipe is a bargain in terms of calories and fat. I will not go now into the the nitty-gritty side of nutrition, but a lighter dessert really makes a difference in how you feel after a dinner, especially if it is a bigger meal for a special occasion.
And last but not least, it takes only 5 minutes to prepare. It needs to be chilled for a few hours or overnight though to settle a little. It is a perfect low-mess project for your little ones to help you with or do on their own!
- 8 oz silken tofu
- ¼ cup semi sweet chocolate chips, melted
- 2 tbsp. unsweetened cocoa powder
- ½ tsp. vanilla extract
- ¼ cup maple syrup
- Juice of 1 lemon
- ½ tsp. of grated fresh ginger or ¼ tsp. of dried ginger
- 1 cup fresh strawberries or raspberries, to serve
- Place the first 7 ingredients in a blender and blend until smooth
- Spoon the mousse into ramekins and decorate with berries.
- Chill before serving.
