Seriously, can one have too many chicken recipes? Not me!

Especially if they are as easy and flavorful as these lemony filets. I remember my kids complaining once that that my food tasted quite bland. Ugh… I guess I was stuck in my imaginary “child-freindly” box for a little too long.

Well, not anymore. This lemon chicken recipe is full of flavor and – a bonus for busy nights – takes only a few minutes to prepare.

And if your kids are like mine and prefer their meats and chicken “not chewy”, you will be glad to hear that a little pounding and some acidity from the lemons make the fillets irresistibly soft.

To put a dinner on the table in a flash, try preparing the chicken up to step 5 and cook your sides, like rice and veggies, in advance.

Or just serve some crusty bread and crudités with a dip to round the meal.

10 minute delicious lemon chicken

Serves 4 or 6

Ingredients:

1 lb chicken breast ( 3 small or 2 big fillets)

salt, pepper

2 tablespoons butter

2 tablespoons flour

1 lemon, sliced into rounds

Preparation:

1 Slice the chicken breasts into 2-4 slices lengthwise.

2 Pound them slightly to achieve equal thickness throughout the filet.

3 Season with salt and pepper.

4 Sprinkle the fillets with flour on both sides and shake off excess.

5 Melt the butter in a pan.

5 Fry the chicken breasts until they are slightly browned and cooked through, for about 2-3 minutes per side.

6 Remove the chicken on a plate and cover with foil.

7 Saute the lemon slices on the pan, pressing with a spatula slightly to release the juices.

8 Add the chicken to the pan, mix with the lemons and heat for a few minutes.

9 Serve with rice and your favorite vegetables.

How to adapt for a baby:

If your baby eats finger foods, shred one of the fillet pieces along the grain or cut in small pieces.

If your baby eats purees, cook a piece or two without seasoning and puree adding some water, breast milk or formula.
